Huckleberry Fudge Recipe

  • 8 oz. cream cheese, softened
  • 4 c. powdered sugar
  • 12 oz. white chocolate (I used one package of nestle white choc chips to melt)
  • 1/2 c. huckleberry jam
Beat the cream cheese in mixer till smooth. Add the powdered sugar on cup at a time and beat well until both are well mixed. In a separate-microwave safe bowl-place the white chocolate chips in it microwave for 1 minute, take out and stir, then repeat once more. After second time microwaving, take out and stir for a few minutes until all the chocolate chunks that are left have been melted. Once its completely melted, add the white chocolate to the cream cheese mixture. The mixture then will loose is texture, and will become more fluffy. After that, mix in the huck jam and beat all together until well mixed.

Prepare an 8x8in. pan by placing wax paper in it. Pour the fudge batter in to the prepared pan then, and refrigerate for 2-3 hours. Fudge will always be a softer consistency, but should harden a bit after its been refrigerated. Once solidified, cut into 1x1in pieces-and enjoy!

Should make anywhere from 60-70 pieces depended on how you cut it.
